We are going to the award-winning Apéritif Bali! So excited for our first in-person live cook as we will be teaming up with Chef Nic Vanderbeeken to create ‘RENDANG CARBONADE’, a unique take on beef stew where 🇮🇩 Indonesian meets 🇧🇪 Belgian cuisine. Chef Nic Vanderbeeken is originally from Belgium. He brings over 20 years of experience to lead the team at Viceroy Bali’s Apéritif Restaurant and Bar. Prior to Apéritif, he has worked in Vietnam developing the bistronomy concept he pioneered as Chef-Owner of Bistro Biggles, Belgium and shared his talent in the kitchens of Michelin-starred restaurants in Belgium and France, including Restaurant Berto, Restaurant Convent and Celebrity Chef Wout Bru’s two MIchelin-starred restaurant. As an advocate for cross-cultural collaborations, Chef Nic has also collaborated with many Chefs worldwide, including Antwerp’s Nick Brill, Chef of the Jane; Miami’s Brad Kilgore, a James Beard 2018 finalist and Chef at Alter Miami; and Ghent’s Michael Vrijmoed, Chef-Owner of two Michelin-starred Vrijmoed Restaurant, to name a few. He seeks to draw inspiration from his experiences, as well as those of his team, to create a dining experience that will stand the test of time.
