Southern Smothered Catfish with 🇮🇩Nasi Uduk by Chef Jesse Houston and Homemade Indonesia 🎉 CREOLE TOMATO GRAVY In a pot, melt butter, bacon fat, then add the Trinity (onion, diced green bell pepper, diced celery) and minced garlic. After a few minutes, add salt, black peppr and the creole seasoning. Next add flour, lower the heat, and cook for another minute. Then add thyme and bay leaves. Add diced tomatoes, leave them to cook on low heat. Once tomatoes release all its moisture, add milk, and hot sauce and worcestershire sauce, continue cooking until sauce thickens and becomes frothy. NASI UDUK 1. Add coconut milk to a pan, bring to boil. 2. Add galangal, lemongrass, lime leaf and bay leaves. Season with salt, then add the rinsed rice. Stir ocassionally untill coconut milk reduces. 3. Transfer to steamer and let it steam for about 20 mins. CATFISH 1. Season catfish / any fish fillet with salt, pepper, creole seasoning on both sides. 2. Heat up pan on high heat, add oil and pan-fry fish on both sides.
