Nasi Goreng with Crispy Skin Sea Bass and Tzatziki


RECIPE: Nasi Goreng: 1. Pound shallots, garlic, terasi (shrimp paste) and fresh chilies until coarse. 3. Heat oil in a skillet / wok, sautee paste until fragrant. 4. Crack an egg into skillet, scramble, mix together. 5. Add rice, season with salt, soy sauce and sweet soy sauce. 6. Stir-fry until each grain of rice is individual and caramelized. 7. Serve with crispy shallots and pickles. Also prawn crackers and fried egg (optional) Crispy Sea Bass: 1. Prepare your fillet. Remove bones, belly part. Cut diagonally on both edges. 2. Score fish fillet and pat dry. 3. Heat up a small pan over hi heat. 4. Brush skin side with olive oil. 5. Place fish skin side down on pan, press gently to prevent fish to arc. 6. Season with S&P, once the side of fish turns white flip the fillet once and let it cook on the other side. Season the other side. 7. Turn off heat, add a hint of butter. Tzatziki Style Sauce: Mix Greek Yogurt with grated cucumber, lemon zest, some fresh lemon juice, chopped mint (dill), and chopped garlic in a bowl SERVE together! 🤤 Full tutorial video on IGTV! ❤️ Ingredients in the comments! .. RESEP Nasi Goreng: 1. Haluskan bawang merah, putih, terasi dan cabai rawit. 2. Panaskan minyak, tumis bumbu. 3. Tambah telur, aduk rata. 4. Tambah nasi, bumbui garam, merica,kecap manis. 5. Goreng nasi sampai kecoklatan. 6. Sajikan dg bawang merah dan acar, kerupuk. Crispy Sea Bass: 1. Siapkan fillet. Sisihkan tulang, perut. Potong secara diagonal di kedua sisi. 2. Skor fillet ikan, keringkan. 3. Panaskan wajan kecil di api tinggi. 4. Olesi sisi kulit dg minyak zaitun. 5. Letakkan sisi kulit ikan menghadap bawah, tekan agar ikan tidak melengkung. 6. Bumbui merica garam, setelah sisi ikan memutih, balik fillet, biarkan matang di sisi lainnya. Bumbui. 7. Matikan api, tambah mentega.
